I would like to say that I love your recipes! I have incorporated them in to our weekly meal plans. I love the banana ice cream because my Son is alergic to dairy products, so that is a great alternative. It really seems like real ice cream! I have a better awareness to why we want to eat good and more organic foods. Having the 'dates' in the recipes to give the sweetness in the brownies is a great alternative to sugar. I typically like sugary things and this way I get that same feeling but know the it is still healthy. I have been feeling 100% better by avoiding sugary foods and eating more healthy recipes. I was a lifestyle changing cooking class for me. So thank you for that!

Rachelle,I thoroughly enjoyed the nutrition workshop in Lumsden.  I appreciate you sharing your valuable knowledge on eating whole, organic foods, the recipes you gave us and opportunites to contact you for advice.  I now make my own granola and granola bars thanks to you.  My daughter is gluten free and we can all eat the same cereal/bars and enjoy the nutritious value without eating so much refined sugar and other 'things' that we don't know what they are.  I have always enjoyed eating 'whole' foods as opposed to 'processed' foods and with the reminder from you how easy it is to lightly steam kale and swiss chard ...they are now part of our meals.
I also enjoyed the yoga classes Rachelle lead us in. She has many valuable talents.....I wish you her the best and much success in the future!

I attended a workshop with Rachelle. I was very nervous going in because I had very little knowledge in the topic of nutrition. Rachelle put the group right at ease with her simple terminology and easy going nature. I came away from that workshop with concrete ideas that could be implemented right away. She also sparked my interest in how important a holistic approach to food is on my overall health and well-being. I can’t wait for the next workshop!
